Food is one common thread that binds people of various races and casts together. India, the land of cultural diversity is famous for the large pallet of cuisine that is served here. In India weddings are the perfect occasion for people to tingle their taste buds. The Indian cuisine is a blend of diverse cultures, races, regions and climate which co-exists in perfect harmony. Each state of India has its own gamut of unique dishes. This entire range in the Indian cuisine is what makes it unique. Some times just because of the change in some basic ingredient the same dish taste differently in different region. Aromatic spices are the basis of Indian cuisine. The liberal use of spices like: curry powder, turmeric, chilli, coriander, cumin, fennel, fenugreek, celery, black pepper, ginger, cardamom, garlic, clove, nutmeg, cinnamon, tamarind give Indian food its distinct taste.

Milk products like ghee (clarified butter) and dahi (Yoghurt), buttermilk, sour cream, cottage cheese, a variety of dals (lentils) and regional vegetables are other common ingredients in Indian cooking.

Breads are made with wheat, rice and ground legumes depending on the part of the country.

Planning the Wedding Menu As food is such an important aspect of the Indian weddings so it becomes a matter of ones dignity to serve a large variety to cater to everybody`s individual taste buds. People plan about the various menu combinations and the wedding planners are ready to provide the best possible options. While planning the wedding menu there are a few things that one needs to remember like:

  • Serving such a menu which caters to the flavor and taste buds of majority of people.

  • Every Indian community has a very typical specialty of their own for a menu. Weddings are the times when these traditional dishes and tastes are followed and savored. Every special menu as it has its own typical taste also has a lovely delightful expression to it and this whole combination makes a wonderful feast. Though every wedding still has its traditional touch, there sure is a change that we observe in deciding the menu. In fact, the menu changes with a trend every season and while certain traditional dishes have their own corner to themselves, certain common trends are seen to have captured a much following in serving wedding menus. Once the menu is decided, the job is passed to the caterers. In fact, not only the menu but also the dιcor and the theme, if any, also can be suggested and observed by the caterer.

    As a rule, wedding feasts reflect their regional cuisine. Hence while delicate fishes are a must-have in a Bengali wedding, in a Maharashtrian wedding, vegetables cooked in coconut based gravy and spicy green mango chutney will always be there. But with changing times, the wedding feasts too have changed. Nowadays, a lavish spread often has various different cuisines to choose from, like Continental, Chinese and Mexican among others. The food is served in three different rounds- snacks, main course and deserts. Also, special counters are set up to serve wine and spirits.
